Our Gin begins with a rye mash, and is distilled three times. During the last distillation, we add our botanicals that include juniper, coriander, licorice root, cardamom, lemon peel, lime peel, orange peel and orris root. The spirit is then brought down to 80 proof with purified water.
Our Spiced Rum is made with Carribbean Black Pearl Molasses, and distilled in a way to maintain a lot of the dark and rich character of the molasses. After distillation is complete, we spice it with a blend of cinnamon, cloves, star anise, vanilla bean, orange peel and allspice. After a week or so on the spices, we filter the rum and proof it down to 80 proof.
Apple Eau de Vie
Apple Eau de Vie is our very first product available to the public. Literally meaning, “Water of Life,” Eau de Vie is an un-aged, colorless, fruit brandy, generally served as a digestif. Ours uses whole locally sourced Keewaydin Apples, giving it a fresh and crisp flavor.
